KETO NUT BUTTER COOKIES

Cookie lovers club! Ok, so these have become my ideal mid morning treat. A 5-minute protein rich, natural low sugar recipe that everyone and anyone will love. With a few simple ingredients, these pair incredibly well with coffee / tea / chai / matcha and are just all-round amazing.

 

INGREDIENTS 

            1⁄3 cup (50g) teff or rice flour (oat flour works too)
            ½ cup (90g) erythritol (I like Whole Earth brand)
            ¼ tsp celtic salt (or salt of choice)
            1 heaped tsp bi carb soda
            2 tbsp dark sugar free choc chips (optional)
            1 cup (280g) natural smooth peanut / almond butter (or a combination)
            ½ tsp vanilla essence
            4 tbsp non-dairy milk of choice

 METHOD

  1. Set oven on to 170 C.
  2. Place teff or rice flour, erythritol, salt, bicarb and choc chips into a medium mixing bowl
  3. Add your choice of nut butter, milk and vanilla essence to the bowl and combine.
  4. Line a baking tray with non-stick paper.
  5. Roll mixture into 3cm balls and place on tray (leave space between each ball) and press down on each ball slightly with the back of a fork.
  6. Bake for 10-12 mins or until lightly browned and firm to touch.
  7. Remove cookies from oven, allow to cool, take a bite and then place in an air tight container in the fridge.
