Maca & Peanut Butter Fudge Squares
I was asked by the fab team at Organic Burst to create a recipe for their viewers using one of their organic powders and since I love their Maca so much, I thought I'd use this handy superfood to make a batch of these Maca & Peanut Butter Fudge Squares. I use Organic Burst Maca almost daily. I usually add a tablespoon to my daily smoothie and mix some through porridge and chia puddings. Why? Because this powerful powder has a wide range of nutrients, including vitamin B, vitamins C and E and provides plenty of calcium, zinc, iron, magnesium, phosphorous and amino acids. Maca also helps to balance our very delicate hormones. With the demands of daily life and the stress that comes with my current chaotic schedule, I find I rely on natural supplements to support me through these somewhat manic times. Needless to say, Maca is on high rotation at my place. These fudge squares are so easy to make and absolutely delicious to eat. You only need a handful of ingredients and just 20 minutes to get these happening. INGREDIENTS 1 cup Peanut Butter ½ cup Macadamia or Almond Butter 1-2 tsp Maca Powder (1 tsp if new to maca, working up to 2 tsp) ¾ cup Cacao Butter (in liquid form) ½ Rice Malt Syrup 1/8 tsp Himalayan Salt ½ cup Cold Pressed Coconut Oil (in liquid form) ¾ cup Cacao Powder 1/3 cup Rice Malt Syrup METHOD Place all ingredients in the food processor and process until the mixture is smooth and well combined. Press mixture evenly into a baking tin lined with baking paper. Freeze for 1-2 hours. Make chocolate by whisking coconut oil, cacao and rice malt in a medium sized bowl. Remove Fudge from freezer and cut in squares. Drizzle with chocolate. Best kept in the fridge in an airtight container. Enjoy, Tx
