NEW RECIPE - Kale Acai Bowl

Acai – you sexy thing! When I love something, I stick with it, but since reducing the amount of fruit / natural sugar I consume (hello almost-40’s), my smoothie game has really suffered. Nevertheless, cravings for my favourite at-home acai bowl did not abate, so I got experimenting and came up with a much-loved adaptation of my OG recipe. And it satisfies! Creamy, thick and super refreshing, this newbie hits the spot. 

 

What did I do exactly? To reduce the sugar and up the veg, I swapped the banana for frozen kale and coconut, and added some quality seeds to give me some extra fibre and protein. I usually purchase pre chopped, cubed frozen kale from my local wholefoods store. I saw recently that they sell frozen kale in a regular supermarket so it ain't too hard to find. You can also use frozen spinach if kale isn't your thing (although you won't taste any hint of green in this, trust me). 

For the coconut, I buy whole fresh coconut, crack it open and extract the white flesh, cutting it into small 1 inch pieces which I then freeze. I only use 1 -2 pieces in my smoothie so one whole coconut lasts me a few months at least.

This recipe in on my weekly hit list. It fills me up all day, and keeps the sugar cravings at bay.

KALE ACAI BOWL

Ingredients:

½ cup frozen kale cubes (I buy these ready frozen from my local supermarket)

2 small pieces or up to ¼ cup frozen coconut flesh

1 cup (150g) frozen mixed berries

1 tbsp hemp seeds

1 tbsp chia seeds

1 heaped tsp acai powder

½ tsp adaptogen (optional)

1 heaped tbsp cacao powder (I like it chocolatey)

½ cup almond / plant milk

 

Optional Toppings:

 Nut butter (crunchy 100% natural peanut butter is my favourite)

Coconut shreds

Nuts / Seeds 

 

Method: 

  1. Place all ingredients in a high-speed blender and blend until you’ve reached a soft serve consistency. You want a semi-frozen finish so resist adding more liquid. Instead use the blender stick to force the frozen fruit to break down.
  2. Spoon into a bowl, add your toppings.
  3. Eat immediately!
